Blend: 80% Zinfandel, 19% Cabernet Sauvignon, 1% Cabernet Franc
Vineyard: 100% Estate – Adelaida District, Paso Robles.
Fermentation: Destemmed and cold soaked for 8 days with daily pump-overs. 12-day fermentation with a mix of delestages and pump-overs for cap management. 20-day total maceration.
Cooperage and Elevage: Aged for 22 months in once and twice used barriques: 75% Hungarian, 25% French.
TA: 6.8 g/l

Notes: Inky black in color, this Zinfandel packs bright red raspberry, black pepper, clove and rose petal into an explosive aromatic profile. Unctuous flavors of Kirsch, cinnamon, charcuterie, and herbs are layered into an impressive and dense palate. The finish is powerful with supple tannins and refreshing acidity.
