A note from the winemaker:
The 2019 vintage created wines of pure elegance-they’re bight, graceful, and age-worthy. The wines selected for the Fall 2022 release exemplify the vintage.

2019 Shannon

46% Cabernet Sauvignon, 24% Merlot, 20% Malbec, 5% Cabernet Franc, 5% Petit Verdot

A brooding nose filled with black cherry, leather, crushed rocks, lavender, and tobacco leaf. The impressive mid-palate is filled with flavors of plum, dark chocolate, and hoisin that evolve into round tannins and a luxurious finish.

Vineyard:
100% Estate – Adelaida District, Paso Robles.

Fermentation:
Destemmed and cold soaked for 7 days with daily pump-overs. 5-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 12-day total maceration.

Cooperage and Elevage:
Aged for 22 months in 225L barriques: 47% new French oak, and 53% used French oak barrels.

TA: 6.2 g/L

2019 Limerick

7 65% Merlot, 17% Petit Verdot, 15% Cabernet Sauvignon, 3% Cabernet Franc

The brightly pitched nose offers aromas of strawberry, anise, coriander, and mulberry. The silky palate boasts flavors of red currant, cocoa powder, and chaparral as it leads to the elegant midpalate that is framed with fine grained tannins and an impressively long finish.

Vineyard:
100% Estate Adelaida District, Paso Robles.

Fermentation:
Destemmed and cold soaked for 6 days with daily pump-overs. 7-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 13-day total maceration.

Cooperage and Elevage:
Aged for 22 months in 225L barriques: 28% new French oak, 14% new Hungarian oak, and 58% used French oak barrels.

2019 Cabernet Sauvignon

96% Cabernet Sauvignon, 4% Petit Verdot

Blackberry, violet, scorched earth, and dried herbs soar from the glass, while stylish flavors of currant, cocoa powder, chipotle and seared filet mignon dance on the palate. The midpalate is juicy and silky as it is carried through to the finish by perfectly balanced acidity.

100% Estate Adelaida District, Paso Robles.

Destemmed and cold soaked for 6 days with daily pump-overs. 5-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 11-day total maceration.

Aged for 22 months in 225L barriques: 77% new French oak, and 23% neutral barrels.

2019 Cabernet Franc- Mad Hatter Exclusive

100% Cabernet Franc

An intoxicating nose filled with espresso, sage, lavender and wet earth introduce this savory Cabernet Franc. The palate sports flavors of blueberry, fig, citrus blossom and wild mint. The midpalate is round and supple, leading to a profound and lasting finish.

100% Estate Adelaida District, Paso Robles.

Fermentation:
Destemmed and cold soaked for 6 days with daily pump-overs. 7-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 13-day total maceration.

Cooperage and Elevage:
Aged for 22 months in once used 225L barriques.
