Aromas of cocoa powder, black currant and wet granite soar from the glass as notes of chaparral, dried alfalfa and anise linger in the background. Supple flavors of tamarind, soy and espresso progress to a generous mid-palate. The complex finish is driven by chalky tannins and beautifully refined acidity.
Vineyard: 100% Estate – Adelaida District, Paso Robles.
Fermentation: Destemmed and cold soaked for 5 days with daily pump-overs.
9-day fermentation with a mix of delestages, pump-overs and punchdowns for cap management. 14-day total maceration.
Cooperage and Elevage: Aged for 34 months in 225L French oak barriques: 66% new, 34% neutral.
